Denver Restaurant The Ginger Pig Expands to The Hill

The Ginger Pig, a Denver-based restaurant, is set to open a new location on The Hill in Boulder later this year. The restaurant, which was founded in 2016 by Natascha Sherman Hess and her husband Steve, was inspired by Hess's host family in Beijing and focuses on Asian-inspired street food. What started as a food truck at the Rayback Collective in 2016 became a brick-and-mortar Denver location in October 2020. The Boulder location will feature a slightly smaller menu with exclusive dishes, including a vegan version of the restaurant's Korean curry cornflake dog. The restaurant eventually plans to implement sidewalk and rooftop seating.

The Ginger Pig will be located in the former La Choza space at 1203 13th St. in Boulder.
